 On Sunday we attended our first backyard party of the season! The weather wasn't exactly super warm but it was sunny and as long as you were dressed in layers, you were fine. Since it was a potluck style party, we brought 6 heads of kale {yes, 6!} to be grilled. Sonny "marinated" it with olive oil, and salt before we left, then we sprinkled nutritional yeast on it when it was on the grill. So good!
I made my absolute favorite, Vegan Coconut Bars and even got a request for a potential catering gig! Never thought about doing that sort of thing before but, who knows, maybe we're on to something? With all this food talk, Sonny, and I have just embarked on a Juice fast starting today. This is my first time ever trying to fast and I'm not quite good at it. I've already cheated with a kind bar, and well, tonight I had some more kale. I'm hoping that tomorrow will be easier!

Tofu Omelet {sort of}

I've hesitated to post this recipe for two reasons. The first being that the picture of the end result is less than desirable, and second, it didn't quite turn out perfect. But I finally came to my senses and told myself that my readers know that I'm not perfect and so why would I try to hide it? Honestly, the blog world could definitely use a little more reality so here is my contribution!

We all know that the standard copout for any restaurant wanting to offer a vegetarian friendly brunch item  is to go with the standard Tofu Scramble. I highly dislike this as it's super easy to make a delicious scramble in the contorts of your own home. So why would I pay for it? Anyhow, I try to avoid going that route, which is why I love going to Organic Grill. They're one of the only places in the city {that I know of} that offer a tofu omelet! Plus it's delicious too. So one Sunday morning, when I got out the tofu to make yet again another scramble, I thought i'd be all adventurous and try my hand at an omelet. Here's how it went down.

What you need:

1 package of firm or extra firm tofu
1 tablespoon of ground flaxseeds
2 tablesppon olive oil
1 tsp cumin
1 tablespoon tumeric
salt & pepper

fillings:
1/2 cup sautéed kale
1/4 cup tomatoes, chopped
1/2 cup daiya cheese- shredded
1 tofurkey sausage, grilled
anything else you want in your omelet! (mushrooms, avocado, olives, broccoli, spinach, etc.)


What you do:

1. Start by pressing your tofu with a cotton napkin or paper towel to remove excess water. Then proceed to grating your tofu in a big bowl {yes, with a cheese grater!}.
2. Mix the ground flaxseeds with water in a small ramekin, then add to tofu. This will act as a binding agent.
3. Season your tofu however you like it. I use turmeric, a little cumin, sometimes curry powder, and salt & pepper.
4. On a non-stick pan on medium heat, lightly oil,  and then place the tofu mixture once heated. Pat it down with a spatula until its evenly flat. Cook for 4-5 minutes.
5. Add your fillings to one side of the tofu, and gently fold over to cover. **Now this was extremely tricky and didn't really work unless I had two spatulas. A pancake flipper would've been great! Make sure that the tofu has browned a little & has made a small crust before flipping over.
6. Wait another 2 minutes before removing from pan to plate.

* As I mentioned, this was my first time ever trying to make a tofu omelet. If anyone has any tips on how to make it not stick to the pan, but get a sufficient "crust" to make it flippable, i'd love to hear some suggestions!

Genie Pants.

I have a long standing love for genie pants. When I was younger I use to wear something like them, but with stirrups. Yup, I was that cool. Anyways, I found these at a vintage store called Sweet Jane in Philly. It really was a great store full of reasonably priced goods! I simply couldn't pass them up. Unfortunately these pictures don't do them justice.

These pictures were taken on Sunday which was a beautiful sunny warm day here in Brooklyn. We started out with some brunch at our little local vegan spot, then ended up at the Brooklyn Flea. We had a great time rummaging around crates and bins looking for nothing in particular. We eventually want to start some little renovations around the house so we've been eyeing vintage furniture and wall decorations to possibly add to our little abode. I think painting is actually going to be the first thing to start it off. I'm kind of scared to tell you the truth as it's such a big task to take on and actually finish. With summer around the corner, I know our schedule is just going to get busier as we go. I guess I just need to take baby steps with the whole process. And well, it's just an apartment so I'm sure we'll be able to handle it!

Chilly Philly.

I've been meaning to blog about my recent trip to Philly but when I uploaded my pictures, I realized that I barely even took any! Thankfully, I have other shutterbug friends and basically just stole theirs.

On the way, we stopped at the first Goodwill we saw. All of us came out with something. I found some great crop tops from express, circa the 90's that I can't wait to wear this summer {with high waisted skirts of course!}

We got brunch here. One hour wait. I had the tofu scramble which I really don't recommend. Unless you like watery, bland scramble with green peppers (?!) Yup, didn't think so! For the most part, the food everywhere we went was really delicious and most pubs were vegan friendly which really surprised me considering your lucky if you even get a veggie burger option here in NYC.

Life Lately.

So I've been MIA for a week now but have not forgotten about my blog and most importantly you guys! I'm still here, just trying to get a lot of things done with not a whole lot of time. So to sum things up here are things that I've been up to:

Maia 

1. Maïa: My new niece! She was born on March 29th, in the comforts of her new home! I'm so proud of my sister for having a home birth, even though it wasn't exactly planned to be that way. Have you seen this documentary yet? I'll be seeing my godchild for the first time the first weekend of May.



New headbands 

2. New Knitty Headbands: That's right, now that Spring is here, I'm working on getting new items in the shop that are suitable for warmer weather. I made these cute little headbands that are so perfect for Spring and and hoping to get more up in LKT very soon. ( Psst... all items in the shop are currently 15% off when you use code KNITTY15!)



3. Retro Fitness: K, this is a lame update but I switched gyms recently and I'm loving the change. Retro Fitness, that just opened up in Williamsburg is actually pretty great. I'm a big fan of their movie screening room, where I can use either bike/treadmill/elyptical and watch the movie of the day on their big screen.



4. Philly: Leaving for Philly bright and early tomorrow morning in 3 hours with some girlfriends! So exciting to take a little trip out of the city. I've never been to Philly so any suggestions are welcome.

5. Instagram: The day has come where Android users can now enjoy the hip photo app that all the cool kids are using. I've been instagramming like crazy this week (my handle is ideegeniale if you want to start following me)!

Well, hopefully Spring will get me back into the blogging mode. I find it really hard to schedule time to sit  in front of a computer and do things other than checkout interest, and browse on etsy. We'll see, maybe a change in seasons all I need to get my creative juices flowing again!
